Special Edition: Natural Dyes for Easter

This long standing Easter tradition need not die at the hands of quarantine, in fact, you can indulge in this AND be a little more eco friendly at the same time!

• Here I will give you a list of natural food based dyes, how their made, accompanying recipes (so no food is wasted)!

Peach = avocado pits

  • Create this dye by bringing pits to a boil and then simmering for about an hour, then let cool and there ya go

Louisiana Guacamole Recipe
  • 4 whole avocados, pitted + 1 tomato, cored + 2 jalapeños with seeds removed + 1 medium red onion + 1 clove garlic + juice of 1 lime and 1/2 lemon + a healthy dose of Tabasco, mash avocado and coursely chop all add ins, then mix but leave it semi-chunky

Pink = beets or cherries

  • Roast beets at 450F for 1hr, then let cool, mix with water, and blend, then strain

Beets, Sweet Potato, & Goat Cheese Salad
  • Roast sweet potatoes and beets at 450F for 1hr or until tender, chop into strips (like matchstick carrots), toss in a bed of spinach or mixed greens, top with grilled chicken, and dress with equal parts lime juice and olive oil with a little curry powder and cayenne mixed in

Purple/Blue = red cabbage

  • Boil cabbage in water then simmer until the color appears rich

Sesame Oil Cabbage
  • IMO cabbage is the most underrated cooked veggie, I recommend cooking it down in sesame oil and seasoning heavily with salt and cayenne and sesame seeds, it’s done with it’s just a tiny bit crisp

Green = spinach

  • Boil spinach in a small amount of water then add spinach and used water to a food processor and blend, then strain

Green and Pink Smoothie
  • 1c mixed berries + 1c spinach (raw or boiled and cooled) + 1 banana + 1c cherries + 1/2c nonfat Greek yogurt + equal parts OJ/almond milk/water adding up to 12floz + protein powder of choice (I prefer plain) and blend thoroughly

Baby Blue = black beans

  • Allow the egg to soak in black bean water (extra tip: add baking soda to make it green!)

Black Beans with Fried Plantains
  • Drain your can of black beans, then add them to a pan with some onion, allow the onion to caramelize and keep turning the beans; while you do this, chop a plantain in 3in segments and heat oil to 350F in a large pot (be careful) put it plantains one at a time until they are tender but crisp, serve over the black beans

Yellow = turmeric

  • Mix 4c water, 3tbs vinegar, and 4tbs turmeric and bring to a boil and let simmer for 1hr

Turmeric Coconut Rice
  • Make long grain white rice as you would but replace 1/2 the water with coconut milk, add in salt, a touch of oil, and 1tbs turmeric, it’s especially great when served with white fish

Orange = mixed carrot peels and yellow onion skin

  • Boil a bunch (just a lot lol) of each in water then simmer for 3hrs

Nana’s Chicken Soup
  • In a large pot add a whole chicken with skin and bones, 2 coarsely chopped yellow onions, 1lb chopped and peeled carrot, salt, cover with water and add 1 bouillon cube, let sit for a loooong time till veggies are tender and chicken is fully cooked, the remove bones and shred chicken meat

Brown = coffee grounds

  • Make coffee as you normally would, but a bit stronger, and that’s it

  • Just drink it, lol
